Truffles have the appearance of tubers formed inside by a fleshy mass called “gleba” and on the outside by a bark called “peridium”; they consist in a high percentage of water, fibres and mineral salts absorbed, the latter, by the roots of the tree with which they live in symbiosis. The white truffle of Alba, called in Piedmontese dialect “trifola”, is judged by all experts to be the best ever and is found exclusively in a small hilly area of the Langhe, Roero and in part of Monferrato. There are also other areas of Italy where the white truffle is harvested, but the product does not always manage to have the same quality levels. In the end, continue to the hotel. Inside you can see the rooms with the period furnishings of the Marquise Giulia Colbert, the hall of the coats of arms, the library with the memory of Silvio Pellico, the patriot who, returning from the Spielberg prisons, served here as secretary and librarian for nearly twenty years. On the upper floors there is the ethnographic-oenological museum of Barolo, an exhibition of ancient viticultural and oenological tools in use in the area, documenting the life and work of winemakers in the Langhe; in other rooms, a collection of wine crystals and old photographs of the town.
